When I was a little kid, I LOVED rice pudding and I still do. Here's a healthier version that's weight loss friendly. It's high in fiber and helps you get some of the great benefits of blueberries.
Blueberry Breakfast Rice Pudding
2 T. honey
2 c. fat free milk
3 eggs or substitute
2 t. lemon zest
1 ½ c. cooked brown rice
2 c. blueberries
Combine sugar and milk in medium pot; bring to a simmer
Mix eggs and ½ c. of milk mixture in a bowl. Beat to warm up egg mixture. Add to pot with remaining milk mixture. Cook over
low heat, stirring constantly until mixture is the consistency of pancake batter, about 7-8 minutes (I had to cook
about 15-20 min.).
Stir in zest and rice. Cook over low heat to warm, about 5 minutes. Remove from heat and divide among 4 bowls. Top with ½C blueberries.

I didn't update yesterday because I was whooped. I was up what felt like all night after our Super Bowl Extravaganza. Actually, we were all done cleaning up and the house looked spotless by 11:30pm, but then I couldn't sleep all night and I paid the price all day yesterday. I was dragging at work, then I had to pick friends up at the airport (and of course their flight was delayed), then last night there was an awards program at the elementary school. In betweeen all of that, I was determined to catch at least a bit of a nap!
The party was great...I'll have pics up tomorrow. Now I'm off to update the photo blog. I've been great about taking the pics, but I'm a bit behind on updating it over the last few days. Check it out!
