I was never a big chicken salad person, but I've messed around with this recipe enough to finally think that I've got it right! I really don't like mayonnaise, so I had to come up with a recipe that didn't feel "gloppy with mayo" to me.
4 C shredded cooked chicken
1/2 C reduced fat mayonnaise
1/2 C fat free sour cream
1/2 small onion, diced fine
1/2 C finely diced green or yellow pepper
1 tsp paprika
1 tsp salt
fresh ground black pepper
1 C dried cranberries
1 C chopped, toasted pecans
fresh lemon juice
Cook the chicken as you like. You can boil it ~ that's the easy way ~ but if you roast it, or saute it in a skillet with some salt and pepper, it's even better. Anyhow, shred the chicken in a large bowl. Add the cranberries and the nuts and set it aside. Mix the sour cream, mayo, onion, pepper, paprika, salt and pepper in a different bowl, then pour it over the chicken, squeeze in some fresh lemon juice, and mix.
Yummy!
You can also substitute different things that you like in this as well...I really like it with a bit of pineapple!

It's Primary Day in Ohio today....I still haven't decided who I'm going to cast my vote for. I guess I'd better get it together and make a decision.
The weather has turned again, just like they said it would. The last few days have been just great...really warm and feeling so much like spring. In fact, my daffodils and crocus are coming up. But today it's back to lots of rain, lots of wind, and temps in the 40's.
Not much time this morning...I'm going to be painting that mural this morning (and afternoon). I hope I can wrap it up in the morning so that I can catch my taekwondo class at noon. I feel SO out of shape and there's nothing like a good butt-kicking workout when you're feeling really stressed out.
I think tomorrow I'll put up a few layouts that I've finished in the last few weeks. Have a good day!

Your chicken salad sounds awesome. No problem voting here, in and out in less than 5 minutes. Hope your's was as easy. My crocus are starting to bloom but I think that we're supposed to get more snow later in the week and that will shurely kill them. Enjoy the rest of the day.
