First I have to say HOORAY for my Detroit Red Wings who brought home the Stanley Cup last night. I'm so glad that I didn't stay up to watch for nothing, like Monday night's game. It's too bad that they didn't win at home, but it's still good!
Somebody (hi Sally!) gave me grief yesterday for not posting a recipe. Well, in a way I did, but I can't really blame anybody for not wanting to saute' up any cicadas! So today, here's a real simple and easy pasta recipe!
- 8 ounces (uncooked) whole wheat penne pasta
- 3 tablespoons extra virgin olive oil
- 2 teaspoons minced garlic
- 12 ounces sliced portobello mushrooms
- 1/2 cup white wine (or substitute with broth)
- 1 teaspoon butter
- 1/2 teaspoon kosher salt
- fresh ground pepper
- parmesan or romano cheese, freshly grated
Cook pasta, drain and keep warm. In a non-stick skillet heat the olive oil. Add garlic and mushrooms and cook until browned. Don't salt the mushrooms while cooking, because that draws the moisture out of them. Place pasta in a large serving dish and top with mushrooms. In the same skillet add wine, and bring to a light boil while scraping pan. Add butter, salt and fresh ground pepper. Pour sauce over pasta and mushrooms and sprinkle with freshly grated cheese. Feel free to substitute any style pasta for the penne if you prefer.

Crazy weather here lately....lots of tornadoes and really crazy thunderstorms. I took Shannon to the orthopaedic guy yesterday to get her cast off, only to find that they had no power and her appointment had been cancelled. The tears fell like the rain outside, but we're rescheduled again for early this morning. Hopefully, no more casts and the kid can get back to being a kid (and taking a shower!).

Congratulations to your hockey team! Ours is the Atlanta Thrashers. My husband got free tickets last year and we took our oldest 2 kids. They became rabid, hockey fans in about half an hour. The foam fingers were so cool.
The recipe sounds heavenly. I'm a huge fan of Portabella mushrooms.
Sorry for Shannon having to wait for the cast removal! Hope she is showering happily soon! :)

Go Wings!!! It was great to watch the final minutes of that game. Brings back lots of memories from the 97 season when I was in Detroit. Hope that things go smoothly for Shannon with her cast today. Great photos of the storm too btw.
