Since we're all back from the beach, it's time to get back on South Beach diet again. So one of my goals this week is to get back in the groove of planning tasty and interesting meals. And in these days where food prices keep going up and up, it's nice to find something that's not only really tasty but thrify too, hence today's recipe.... Cowboy Caviar
This is great as a side dish, or a vegetarian main dish. I'm planning on taking it to our church picnic this weekend. Deeee LISH!
A few notes....with the jalapeno scare of late, I wasn't able to get fresh ones, so I substituted canned. You can use fresh tomatoes as well. Feel free to substitute or omit whatever you like, like scallions or red onions for yellow onions (I used a sweet vidalia onion). You may also substitute bottled vinaigrette/Italian dressing for the homemade below. It's all good!
Cowboy Caviar
- 1 can black eyed peas, rinsed and drained
- 1 can red beans, rinsed and drained
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes, drained
- 1 can whole kernal corn (optional for South Beach), drained
- 1 can diced jalapeno peppers, drained
- 1 small onion, diced
- 1 green pepper, seeded and diced
- garlic salt
- 1/2 cup red wine vinegar
- 1/2 cup vegetable oil
- 1 clove crushed garlic
- 2 teaspoons white sugar
- 2 teaspoons salt
- lots of freshly ground black pepper
Combine black eyed peas, beans, tomatoes, corn, jalapenos, onions, and green pepper in a large container and stir. Shake a bunch of garlic salt over the mix, and let it sit for five minutes.
While the caviar is sitting, whisk together the remaining ingredients (or blend in a blender or food processor). Pour over caviar mixture and mix well. Chill for several hours or overnight. Serve cold or hot.

That sounds and looks delicious. Now if only I could get my son to eat the beans (he'd pick through the whole thing, the corn would be all that was eaten)
