It's no secret that I LOOOOOVE the Olympics. For two nights in a row now I've stayed up way too late watching all of the drama unfold.
So in honor of all the spectacular sport in Beijing, until the Olympics are over, I'll be serving up some Chinese food here on Recipe Tuesday, with a healthier twist, complements of Healthierchineserecipes.com and Cooking Light. Chinese food has a tendency to be unhealthy thanks to high sodium sauces and lots of oil, but when you make it at home, you can really control that.
1 lb. ground pork
3/4 C water chestnuts, chopped
3/4 C water chestnuts, chopped
1 tsp Minced Garlic
1 Tbsp Light Soy Sauce
1/2 Tbsp Dark Soy Sauce
1 Tbsp Oyster Sauce
1 tsp Sugar or Splenda
Dash of Sesame Oil
Dash of Pepper
8-12 Iceberg Lettuce Leaves, cut into circles
Mix pork, water chestnuts and seasoning ingredients. Lightly coat non-stick frying pan or wok with oil and stir-fry garlic until fragrant. Add pork mixture and stir-fry until golden brown and cooked through.
Serve in individual portions in the lettuce leaf cups.

My stomach is growling just thinking about how these would taste. I think I know what we are having for dinner tonight, if I can muster the energy to go to the grocery for ground pork!

That looks good. I can get DH to eat a lot of stuff if I wrap it in lettuce leaves like the food from when he was stationed in Korea. What kind of lettuce do you find works best?

I'm loving the Chinese recipes all the shows seemt o be doing to celebrate the Olympics. This sounds tasty as well!

Oooh! Did Michael Phelps give a good reaction when he won his 3rd gold? I didn't get to see that yet but I loved watching when his relay won. They were so happy and it was hard not to be happy for them.

That sounds really delicious. My local grocery doesn't usually sell ground pork, so I'll have to hunt around.
I, too, am staying up too late watching the Olympics. The men's gymnastics was fantastic last night. Flawless!

I'm passing this recipe onto my husband --he loves Chinese food, and I'm always telling him it's too high in sodium! So far, I've only gotten to watch highlights of the Olympics. I'm amazed by their dedication and talent. Have a great day!
