I was trying to come up with a clever name for this dish today and couldn't figure it out. So I'll just call it like it is, Delicious Pork. This is not only a hearty, man pleasin' recipe, but it's figure friendly too.
Sorry I don't have a photo today, I never have any leftovers and I forgot to take one when I was making it.
Delicious Pork
- 1 Pork Tenderloin, approx 1.3lbs. cut into medallions
- 2 large onions, cut into rings
- 2 cloves garlic, crushed
- Mushrooms, lots of them, cleaned and sliced
- 2T olive oil
- salt
- pepper
- 1/2 C red wine or beef broth
Cut pork into medallions and sprinkle with salt and pepper on both sides then set aside. Heat oil in a non-stick skillet and saute onions and garlic until translucent. Remove onions from the pan and set them aside. With the skillet still fairly hot, add pork and brown on each side. Add onions back to the skillet, then add wine to deglaze the bottom of the skillet and get those yummy brown juices moving. Let sit for about a minute. Add mushrooms and stir in with the onions. Cover, reduce heat and simmer for about 8 minutes.
This is great with rice, or mashed potatoes, or just by itself! It's Delicious and easy! If you do happen to have leftovers, you can add them into a stir-fry, or a soup, or serve them on top of a salad. It's all good!

Tonight our choir is coming out of our summer hiatus to sing outdoors
HERE at their first annual Festival of Faith. We're singing all of our best songs, so it should be a lot of fun as long as the developing thunderstorms and the mosquitoes don't decide to steal the show. One of the presiding priests was one of Andy's high school teachers, I think that's cool. I miss the choir when we're off in the summer!

Pork is the one meat I can't cook to save my life! No matter what I do with it, it's dry. I think I overcook it.
I am definitely going to try this recipe!

I didn't comment yesterday because I thought that the bathroom fan sounded correct.... I would have guessed the internal impellers for the Torque Converting Clutch in an automatic transmission.
I think I'll try this recipe too. Sounds good!

Thanks for the recipe! I'm always at a loss as to what to do with pork beyond the usual stuff with a loin and chops. This one sounds like something my picky crowd will eat too.
