We're childless this week ~ yahoo! Yesterday we decided that we wanted to eat light, so I whipped up my favorite main dish salad. It's actually a modification of the house salad at a local Italian restaurant and I've loved it for years. After ordering carry out salads from them, I finally decided to make it myself. I tweak the recipe here and there, but the basics remain the same.
I didn't put any quantities on this, just do what you like
Barb's Ferarri SaladChopped mixed greens or romaine lettuce
Sliced grape tomatoes
Crumbled blue or feta cheese
Toasted pecans or pine nuts
Dried cranberries or cherries
Balsamic Vinagrette (sometimes I make my own, sometimes I use Newman's Own)
Garlic croutons
Prepare salad and mix well. Dress the salad before serving on plates. Top with croutons. Serve with hot bread or breadsticks if you like. Yummy! I like this so much that I always make too much so that I can eat the leftovers. In fact, I'm going to eat the leftovers for breakfast this morning!
Wow, we got some showers early this morning and it's really cool, almost chilly, outside! It is feeling like fall today, that's great. Fall is my absolute favorite season, so I'm glad that it's nearly here.

I have GOT to come to your house for dinner. Your recipes rock! And guess what? I got a new bike. Something I have been wanting to do for along time and you inspired me even more. Now the dog and I can really get a goot workout.

This is soooooo one of my favorite salads! I've had various versions from different restaurants, but they're all so yummy! We make this at home and throw in some grilled chicken too.
