Yeah, I know it's Wednesday, but it's still the second "school day" of the week and it feels like a Tuesday to me, so today is Healthy Recipe day.
I'm not a big dessert person, but I love fruity desserts and there's really no dessert that I make more during the summer than homemade strawberry shortcake. In fact, we had it on Monday night when we had family over for dinner. I always make my shortcake from scratch. It's really easy and really delicious!
A few notes: You can substitute Splenda for Baking for the sugar, and Reduced Fat Bisquick for the dry ingredients if you like.
Strawberry Shortcake
1T baking powder
1 tsp salt
2T sugar or 1.5 T Splenda
1 egg, slightly beaten
1/2 C milk (I use skim or low fat)
1.5 T butter or margarine, melted
Strawberries
Sugar or Splenda
Whipped Cream or Non Fat plain Yogurt
Preheat oven to 425 degrees. Cut strawberries, sprinkle with sugar or Splenda, and set aside.
Mix dry ingredients together (or substitute 2 3/4 C Bisquit or biscuit mix for the dry ingredients). Add melted butter, egg, and sugar. Mix well, then knead dough a few times. Spray a baking sheet with non-stick cooking spray (I make mine in my cast iron skillet). Pat or roll out the dough until it's about 1/2" thick. Cut into circles or squares (you can do a circle with a drinking glass) and place on baking sheet. Sprinkle with granulated sugar if you like (optional) Bake for 10-13 minutes, until just slightly brown on the edges.
Cool and top with strawberries and whipped cream or yogurt. I personally like mine with a bit of milk in the bowl. That's how we ate it when I was a kid. And of course, you can substitute pretty much any fruit that you like here. I also love it with blueberries, and home grown peaches would be good too. Yummy!
And speaking of healthy, I have to go to the doc for a physical today, so that I can get my shoulder fixed next week. Ugh. I've been nervous about this for nearly a week. The sensible side of me knows that it's always good to find out if there is something not-so-good going on the inside of your skin, but the other side of me likes to live in the "ignorance is bliss" world. So today I face the music and see if I've inherited any of the problems that family members also have. I sure hope not, but we'll see. I'm not a bit worried about the surgery, but this has me a bit twisted up. I'll be glad when it's over.

omg, I LOVE strawberry shortcake! The strawberries are so expensive here now that I just can't afford to buy them very often. And what good is it for everyone else if I buy them and make shortcake and eat it all myself?

It's been awhile since I've been by.....I hope all goes well for you at the doctors office...the waiting is what always does me in! Hmmm, I've always loved Strawberry Shortcake! There's a farm stand near us that always has fresh shortcake in season. Their peach shortcake is heavenly, esp. with ice cream. yum. :-)
