Recipe Tuesday - Fresh Salsa
I love that we're getting a lot of home grown tomatoes this time of year. I've been making large batches of fresh salsa, and it's so good! It takes some prep work, chopping and chopping and chopping, but it's worth every minute. Feel free to add or substitute whatever you want, because it always works.
Several large ripe tomatoes, diced
1 large red onion, diced fine
2 jalepeno peppers, seeded and diced
1 handful fresh cilantro, chopped
1 handful kosher salt (about 1/4 C)
juice of 1 fresh lime
1 can black beans, rinsed and drained (optional)
1 can whole kernel corn, drained (optional)
Prep all veggies and combine in a large container. Add cilantro, beans, corn, salt, and lime juice.
Let rest in the fridge for a few hours. The longer it sets, the better it tastes.
This is pretty great on anything, from eggs to chicken to tortilla chips (of course!).

this is almost my recipe i leave out the corn because of picky kids, but I add olive oil, coarse black pepper, garlic, and chopped parsely... my kids will eat this by bowlfuls.. with or without chips... and am still loving the new blog look (and Barb loved your comment on my post about leaky eyes... i appreicated it)

I just might try this ... I've never made salsa before and I'm tired of the jar stuff. My SIL makes about 101 different types of salsa but hers are always too spicy for my taste. Of course, Nate will only eat it if I add a cup of blazing rip-your-guts-out hot sauce to it.
