Recipe Tuesday on Wednesday - Help For Leftover Turkey
We're one of those families that loves roasted turkey, and it doesn't have to be Thanksgiving around here to put a turkey into the oven. This is what I did yesterday, so of course, today we're left with a bunch of turkey leftovers.
I've got this recipe for Turkey Tetrazzini in my recipe box, but I thought I'd modify it so that I could prepare a lighter, and healthier version of the original.
1 (16 ounce) package uncooked whole wheat spaghetti

2T butter
1 small onion, diced
2 cloves garlic, minced
1/2 cup all-purpose flour
3 cups chicken broth (or turkey stock if you've got it!)
1 cup skim milk
1 cup fat free half and half
1 lb. fresh or canned mushrooms (optional)
1 C frozen peas (optional)
1 2/3 cups grated Parmesan cheese
4 cups chopped cooked turkey
Preheat oven to 350 degrees F (175 degrees C).

Lightly grease a medium baking dish.
Bring a large pot of salted water to boil.

Drain pasta and place in the baking dish.
Saute onions and garlic in olive oil over medium heat until tender.

Add butter and flour, then whisk in broth, milk and half and half.
Mix well, cook and stir on medium heat until
the mixture comes to a boil.
Stir in 1/2 of the parmesan cheese, mushrooms

and peas and remove from heat.
Mix broth mixture with the turkey and the

(optional). Spray the top of the dish with Pam
cooking spray.
Bake 1 hour until the top is lightly browned.
