I promised you yesterday that I'd pass along my chicken enchilada recipe. I took an old Southern Living basic recipe and changed it up over the last few years. It's not hard, but it does take a bit of effort. It's worth it, however, trust me!
Chicken Enchiladas
5 boneless, skinless chicken breasts, cooked and shredded (or diced)
1 med onion, diced
2 cloves garlic, minced or smashed
olive oil
2 pkgs light cream cheese, softened
1 large can (8 oz) diced chilis
garlic salt
fresh ground black pepper
8" whole wheat or corn tortillas
2 cans green enchilada sauce
shredded cheese
Cook and shred chicken, then set aside. Saute onions and garlic in olive oil until clear and soft. Mix chicken, cream cheese, cooked onions and garlic, a few shakes of garlic salt, chili peppers, and fresh ground black pepper in a mixer until well blended.
Spoon chicken mixture into tortillas and wrap them up tight. Place tortillas seam down in a large baking dish. Cover with enchilada sauce, and then top with cheese. Bake at 350 degree for 50 minutes, or until the cheese is bubbly and brown on the top. Serve with sour cream, shredded lettuce, and salsa on the side!
If you cook the chicken ahead of time, it can save you a lot of work.
You can substitute beef for the chicken and use red enchilada sauce if you'd like. This also freezes really well, so make two pans and stick one in the freezer (before adding the enchilada sauce...put that one right before you bake it). If you're cooking a frozen one, just pull it out of the freezer, bake at 350 degrees for 45 minutes, then top with enchilada sauce and cheese and bake for an additional 45 minutes.

I make chicken enchiladas sometimes and it always seems like theyre missing something and now after reading your recipe, I think its the cream cheese!! Im having one of those a-ha moments!

Your recipes always leave my mouth watering, I'm always at the store, stuck with a 'cup of soup' or possibly an apple....but love the recipes :)

That sounds great! I always take the easy way out and buy the cans of Old El Paso enchilada sauce... they actually turn out pretty yummy too...
I am not a cook.... I leave it to Anthony. He enjoys it and doesn't mind being "stuck" in the kitchen. I'm gonna pass this along to him so I can try it... :-D

Tip for rolling enchiladas: put a ladle full of enchilada sauce on a plate and coat both sides of the each tortilla with a thin layer just before you stuff it with the fillings. Keeps the tortillas nicely moist while they bake. Got that tip from Paula Deen, I think.
