I know it's a few days too late, but I was thinking last Thursday that one of the things that sets Thanksgiving and Christmas apart food-wise for me is the cranberry relish on the table. There's just something special about roast turkey, stuffing, mashed potatoes, and some homemade cranberry relish. It's the perfect condiment, the perfect finishing touch for me! Especially in that late night, round two on Turkey day......mmmmmm!
So even if it's a week late for Thanksgiving, you can serve it on your Christmas table, just like I do. Our family recipe is very simple, so feel free to tweak it as you wish!
Cranberry Relish
1 bag of fresh cranberries, rinsed and dried
1 fresh navel orange
1/2 C pecans
1 to 1 1/2 C white sugar
1/2 tsp ground cinnamon
pinch of salt
With a vegetable peeler, peel the orange, removing the orange zest from the bitter white part. Set orange peel/zest aside. Peel the rest of the orange and discard the white pith. Cut the pulp part into chunks and pulse it in a food processor with the orange zest, until chunky, or grind it in a food grinder. Remove the orange from the food processor and pulse the cranberries in the food processor until chunky. Remove and repeat with the pecans.
Mix all of the chopped cranberries, orange, and pecans in a bowl and add remaining ingredients. Add more sugar if you like more sweetness. I normally use one cup. Mix well and put in an airtight container and let it set for at least 24 hours before serving.

FYI, in a strange twist of events....the toaster oven is working fine again, the stove burner is working fine again, and the car is working fine again. The mechanics couldn't find anything wrong with it, which is so bizarre, yet so great! I can't explain the good fortune, but that's okay. I'll take it!

It's the Hogan luck! Probably the mechanics tightened down whatever they had forgotten to tighten when you had the car checked out previously and just aren't saying. As to the other things, yay for you!
