Last week I decided to try something new and make a South Beach Friendly version of Chicken Cordon Bleu. We had a friend join us for dinner, and needless to say, it was so good that I wasn't able to get a photo before it was all gone! Sorry about that.
Mine turned out looking similar to the photo below, but without the breading.
This recipe is for one individual serving, so adjust as necessary.
Chicken Cordon Bleu
1 boneless, skinless chicken breast
1/4 C crumbled blue cheese
2 thin slices canadian bacon
salt and pepper
PAM cooking spray
toothpick
Preheat the oven to 350 degrees (I actually baked mine on convection at 325 degrees).
Pound the individual chicken breasts as thin as possible (you might have to cut them in half). Layer a bit of blue cheese on top of one side of the chicken, then canadian bacon, then more cheese. Wrap the other side of the chicken around the filling and secure it with a toothpick. Repeat for each individual serving as necessary.
Spray a baking pan with Pam. Place the chicken on the baking pan, spray with a bit of spray butter and shake a bit of salt and pepper on the top (parsley might be nice too). Bake chicken for about 25 minutes and serve.
Mmmmmmm, Yummy!

Chicken cordon bleu is the dish that won my husband over when I made it for his family while we were dating! Unfortunately for him, I'm trying to eat healthier so no more of my old-school recipe. Good news for him is that I found your blog today! THANKS A BUNCH!

You might like the recipe we tried last night, too. It was Monterey Chicken, which consisted of boneless, skinless chicken breasts covered in a mushroom sauce with a little Monterey Jack cheese on top. Ryan and Sean cooked, and it was delicious! I think it would be South Beach friendly.
