I'm not much of a chocolate fan (I know, I know!), but Shannon requested a chocolaty healthy recipe today so here goes. This one is in my recipe box, but I've never made it, however it does sound great. A chocolate pudding sauce forms underneath the cake as it bakes in the oven. I think a tall glass of skim milk is mandatory with this one!
Chocolate Fudge Pudding Cake
1/2 cup whole-wheat pastry flour
1/2 cup all-purpose flour
1/3 cup sugar or 3 tablespoons Splenda Sugar Blend for Baking
1/4 cup unsweetened cocoa powder, sifted
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1/2 cup 1% milk
2 tablespoons canola oil
2 teaspoons vanilla extract
3/4 cup semisweet chocolate chips (optional)
1 1/3 cups hot brewed coffee
2/3 cup packed light brown sugar or Splenda Granular
1/4 cup chopped walnuts or pecans, toasted
Confectioners' sugar for dusting
Preheat oven to 350°F. Coat a 1 1/2- to 2-quart baking dish with cooking spray. Whisk whole-wheat flour, all-purpose flour, sugar (or Splenda Sugar Blend), cocoa, baking powder and salt in a large bowl. Whisk egg, milk, oil and vanilla in a glass measuring cup. Add to the flour mixture; stir with a rubber spatula until just combined. Fold in chocolate chips, if using. Scrape the batter into the prepared baking dish. Mix hot coffee and brown sugar (or Splenda Granular) in the measuring cup and pour over the batter. Sprinkle with nuts. (It may look strange at this point, but don't worry. During baking, cake forms on top with sauce underneath.)
Bake the pudding cake until the top springs back when touched lightly, 30 to 35 minutes. Let cool for at least 10 minutes. Dust with confectioners' sugar and serve hot or warm.
Have you tried the Splenda for Baking yet? It really works great ~ just don't overdo it, or you won't like the overly-sweet taste. I usually use just a bit less than the recipes call for with good results.
==================
So, did you have a good Monday? My girlfriend J called me right when I was finishing up work yesterday (I had to call on some health clinics in some really rough parts of town ~ that is always interesting!) and asked if I'd like to go antiquing with her. So on a whim, I said yes and off we went. Neither one of us bought anything but they sure had some lovely furniture pieces. I saw some great paintings too and leave it to me to only like the ones that cost some serious money. No thanks, I'll just paint my own!
Is it raining where you are? It started raining here yesterday afternoon and hasn't stopped. My back yard is a swamp again and I might just have to get out there and pump it again today. Sigh. I hate that. I am a bit behind on my scrapping, however, so I'm going to get moving on that this morning.
And speaking of scrapping....here's another freebie for you! Leave me a comment today and you might win a gift card from Lauren Reid's shop at Little Dreamer Designs. But don't forget to check back....many of my winners from last week never got in touch with me to claim their prizes! I might have to give those out AGAIN this week, so keep checking back!
I try to stop in every evening...sometimes life get's in the way. LOL I love your Tuesday receipes.

Now that sounds fantastic. Though it probably isn't as healthy if you eat it all. :) I am so tired of this rain. I want my trees!

Chocolate is always a good thing! Thanks for the recipe! I'd love to go antiquing - hubby and I enjoy it together, but we rarely have time anymore.

Wow! What a recipe, but sounds like too much work. I'd rather be scrapping and just grabbing a handful of M&M's!

That cake sounds good. I haven't been antiquing in FOREVER. Iused to be such a regular when DH was deployed and we only had one child that was in preschool that I would get the dealer's discount. I'm like you though. I tend to have a penchant for the expensive stuff and not know it until I look at the price.

I do love chocolate and this sounds like a great recipe. Thanks for the info on Splends, I still haven't tried it in recipes yet, will have to.

Yum. This sounds just like the recipe for "Hot Fudge Pudding Cake" that I have on my blog, except for the use of Splenda and the addition of coffee. Coffee sounds like an excellent choice of liquids for this. I'll bet it makes the chocolate taste deep and rich!
