Today I'm re-posting one of my first recipes that I ever put on the blog. I've had a few requests lately where they could find my recipes all in one place. The truth is, you can find my 2008 recipes here:
but I didn't realize until last night how many recipes I had posted in 2006 and 2007 as well. I promise that I'll get those together soon as well. In the mean time, I found a recipe that I had totally forgotten about. I'm making it for dinner again TONIGHT. Mmmmmm.....now I just have to figure out what to serve with it. So here goes, a la 2006....

Yesterday as I was getting ready to prepare a very kid UN-friendly dinner of spinach and sauteed fish, Shannon asked me if her friend M could stay for dinner. Well that kind of thing is always fine with me, but I am not going to change up my menu to accomodate additional diners.
Some of Shannon's friends are VERY picky eaters, but fortunately M was not one of them. My Kid Friendly Spinach was a huge hit and not only did Andy want more, but the kids did too! So today's recipe is my Kid Friendly Spinach.
Kid Friendly Spinach
4 slices of cooked turkey bacon
1 bag fresh spinach, rinsed and dried
olive oil
salt and pepper
balsamic vinegar
garlic
slivered almonds
Heat olive oil in a non stick pan (I used a pot because the spinach starts out big and collapses) and toss in garlic for a minute or two. Add spinach and bacon. Turn the spinach until it's all coated a bit with the oil and garlic and let it saute down. It was go from a lot to a little. Add a bit of salt and pepper, and about 2TBSP of balsamic vinegar. Add almonds and toss it a few more times.
That's it! It was great!
Thanks so much for the recipe. I love spinache, no kids that aren't grown but who cares about them lol. Think I might make this for dinner.

Sounds like wilted spinach salad. I might even go for that one. Does that mean my tastebuds are only about as sensitive as a kid's?

Sounds yummy! I need to find other ways to eat spinach other than in Olive Garden's hot artichoke spinach dip. LOL

mmm, sounds delish!
I'm always up for a good reipe!
When I make spinach for my kids, I make green eggs and hame.
Sautee' the spinach down w/ butter and a little milk, then puree it in a food proceesor. Add to egg mixture for scrambys and cook like you would scrambled aggs.
Add a slice of grilled ham and woola!
