I had the radio on this morning and they were playing clips from a bunch of songs with LOVE in the title, and I got quite a chuckle out of it. Most of them I'd heard before, some I hadn't, and some are just hilarious!

Speaking of Valentine fun, Shannon won the contest at school for the most creative Valentine box. She did a tropical island theme, complete with a palm tree and a toucan on the top. I should have taken a picture of it.

Red Velvet Cake
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 tablespoons cocoa
4 tablespoons red food coloring
1 teaspoon salt
1 teaspoon vanilla extract
1 cup buttermilk
2 1/2 cups sifted all-purpose flour
1 1/2 teaspoons baking soda
1 tablespoon distilled white vinegar
Well grease a bundt pan. Preheat oven to 350 degrees F (175 degrees C).
Cream shortening and 1 1/2 cups sugar WELL. Add eggs and beat well.
Make a paste of cocoa and red food coloring. Add to creamed mixture. Mix salt, 1 teaspoon vanilla and buttermilk together. Add alternately the flour with the milk mixture to the creamed mixture. Mix soda and vinegar and fold into cake batter. Do not beat or stir the batter.
Bake for 55 minutes. Let sit to cool in the pan for two hours, then remove cake from the pan. Make sure the cake is completely cool before adding icing.
Buttercream Icing
1/2 cup shortening
1/2 cup softened butter
4 cups confectioners' sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
3 fluid ounces heavy (whipping) cream
Cream shortening and butter until fluffy. Add confectioner's sugar and continue creaming until well blended. It will be very thick and heavy. Add salt, vanilla, and whipping cream blend on low speed until moistened. Add additional whipping cream if necessary (up to 2 ounces). Beat at high speed until frosting is fluffy.
